Torte Di Amore (Italian Love Cake)

This is a favorite easy recipe of one of my oldest friends from the 2nd grade, Linda!  Thanks Lin & have a Happy Birthday this week!!!

1 Box Lemon Supreme Cake Mix

1 1/2 lbs. Ricotta Cheese

4 Large Eggs

3/4 cup Sugar
1 tsp vanilla

Preheat oven to 350. Blend Lemon Supreme mix according to box directions and pour into 9 x 13 inch baking pan(greased). Mix well the next four ingredients and spoon into the pan, No need to smooth it out as the ricotta cheese will sink to the bottom as it bakes. Bake for 50-60  minutes or until set. Cool.

Topping:

1/2 cup milk
1 Box Instant Vanilla Pudding(small)
1-8 oz Cool Whip

Blend the topping ingredients on low speed for one to two minutes. Frost cake once it's cooled and refrigerate.
